RED LENTIL AND MIXED VEGGIE SOUP WITH AMARANTH

Ingredients:

​

1 small chopped onion

2 tbsp avocado oil

1 cup chopped carrots

1 cup chopped celery

1 cup chopped zucchini

1/2 cup red pepper

1/2 tsp each of ground cumin, sea salt, tumeric

1 cup of amaranth

1 cup of red lentils

4 cups of purified water

Directions:

​

1. In large pot, on medium temperature, saute onions in avocado oil and add the seasonings.

​

2. Add rest of veggies and the water and mix well.

​

3. Add the amaranth and lentils and bring to a boil.

​

4. Simmer on low heat and let cook for at least 30 minutes.

​

Ready and serve ... enjoy! :)
